gnu: darktable: Update to 4.4.0.

* gnu/packages/photo.scm (darktable): Update to 4.4.0.
[native-inputs]: Replace clang-11 and llvm-11 with clang and llvm,
respectively.  Darktable no longer builds with older versions.
