gnu: make-clang-toolchain: Require explicit libomp.

* gnu/packages/llvm.scm (make-clang-toolchain): Remove default libomp
parameter since each clang-toolchain has a matching libomp package.
(clang-toolchain-13): Explicitly refer to libomp-13.
