gnu: yt-dlp: Build from Git.

* gnu/packages/video.scm (yt-dlp)[source]: Use GIT-FETCH and
GIT-FILE-NAME.  Remove the snippet.
[arguments]: Build the man page in the 'build-generated-files phase.
[native-inputs]: Add pandoc.
