gnu: Fix kernel source infodoc patching for linux-libre >= 6.2.

* gnu/packages/linux.scm (doc-supported?): Rename to ...
(apply-infodoc-patch?): ... new variable with different kernel version
constraints.
(make-linux-libre): Adjust accordingly.
